Crispy pork bites & slaw wreath

Celebrate the season with a quick and impressive Coles Kaleslaw Wreath featuring apple sauce-stuffed Crumbed Pork Bites, cranberries, pistachios, crispy bacon, and sage. Stand the slaw for 10 minutes to enhance flavors. Easily bake the pork bites in the oven if you don't have an air fryer.
Ingredients:
  • 2 x 240g packet frozen Crumbed Pork Bites
  • 350g packet Kitchen Kaleslaw Salad Kit
  • 40g (¼ cup) shelled pistachios, chopped
  • 40g (¼ cup) dried cranberries
  • 18.20 gm extra virgin olive oil
  • 40.00 ml fresh sage leaves
  • 3 rashers streaky bacon
Instructions:
  • Place the pork bites in the air fryer basket and cook at 180°C for 11 minutes, or until heated through. Let them cool for 1 minute.
  • Place the kaleslaw in a large bowl and generously drizzle the provided dressing. Mix well to coat the slaw evenly, then let it sit for 10 minutes to marinate.
  • Mix together the seed mix from the kit, pistachios, and cranberries in a small bowl.
  • In a small frying pan over medium heat, heat the oil until shimmering. Fry the sage leaves for 30 seconds until they turn crisp. Use tongs to place them on a paper towel-lined plate. Cook the bacon in the same pan over medium heat, stirring occasionally, for 5 minutes until it's crispy. Put the bacon in a heatproof bowl.
  • Place the kaleslaw mix in a wreath shape on a large round shallow serving dish or platter. Sprinkle with the pistachio mixture, top with pork bites, and garnish with bacon and sage leaves before serving.
