Perfect pork belly

Juicy pork belly with crispy crackling - a foolproof recipe for a delicious roast or tender pulled pork. Guaranteed smiles with every bite.
Ingredients:
  • 4 kg piece of higher-welfare pork belly bone in
  • 6 bay leaves
  • 2 tablespoons sea salt
  • 2 tablespoons coriander seeds
  • 2 tablespoons fennel seeds
  • 2 tablespoons black peppercorns
  • 4 onions
  • 300 ml dry cider
  • 3 tablespoons plain flour
  • 4 carrots
  • 4 potatoes
  • 4 sticks of celery
  • 2 bulbs of fennel
  • 4 sprigs of fresh rosemary
  • 1 bulb of garlic
Instructions:
  • Uncover the pork and refrigerate overnight to dry the skin. Preheat the oven to 240°C/475°F/gas 9. Score the pork skin. In a mortar, combine bay leaves and sea salt and crush, then add coriander seeds, fennel seeds, and peppercorns and crush until fine. Rub 2 tablespoons of the salt mixture over the pork, reserving the rest. Cut onions into wedges and place them skin-side up. Roast pork over onions for 40-50 minutes until crackling is golden. Prepare vegetables, toss them with rosemary and garlic, season, and mix. Reduce oven temperature to 150°C/300°F/gas 2. Continue to cook pork for 2-4 more hours. Toss vegetables occasionally. Drain fat from onions, add cider to tray and scrape off any bits. Gradually stir in flour and boiling water, simmer for 15 minutes. Serve pork with vegetables and gravy. Add watercress and apple salad and English mustard. Enjoy!
