Air fryer pork belly bites recipe

Transform pork belly into a mouthwatering delight by chilling it overnight for a crispy crackling. Air fry for juicy meat and extra crispiness in minutes, not hours.
Ingredients:
  • 1kg piece boneless pork belly
  • Sea salt, to sprinkle
  • 250ml (​​1 cup) fresh orange juice
  • 3cm knob ginger, peeled and thinly sliced
  • 2 whole star anise
  • 100g (1/2 cup) caster sugar
  • 42.00 gm light soy sauce
Instructions:
  • Place the pork belly in a shallow dish and refrigerate uncovered for at least 8 hours or overnight to dry out. Cut the dried pork into 4cm pieces.
  • To prepare the orange soy caramel, combine all ingredients in a saucepan over medium heat. Stir until the sugar dissolves. Increase heat to high and simmer for 10-15 minutes until the sauce thickens and reduces.
  • Drizzle pork with oil and generously season with salt. Arrange half of the pork in the air fryer basket and air fry at 200C for 15 minutes or until crisp and golden brown.
