Air Fryer Pork Tenderloin with Sweet Potatoes

Air fryer pork tenderloin and sweet potatoes - a simple and delicious family meal in one cook!
Ingredients:
  • 0.25 cup olive oil, plus more for greasing
  • 0.5 cup pineapple preserves
  • 0.5 teaspoon granulated garlic
  • 0.5 teaspoon cayenne pepper
  • 1 teaspoon salt, or to taste
  • 0.5 teaspoon freshly ground white pepper, or to taste
  • 1.5 pounds sweet potatoes, cut into 1-inch pieces
  • 2.5 pounds pork tenderloins
Instructions:
  • Preheat your air fryer to a toasty 390 degrees F (200 degrees C), following the manufacturer's suggestion.
  • In a large mixing bowl, blend together olive oil, pineapple preserves, garlic granules, cayenne, salt, and white pepper until thoroughly mixed.
  • Take the sweet potato pieces and coat them with the pineapple preserves mixture in a mixing bowl. Then transfer the sweet potatoes to a plate, keeping the extra pineapple mixture aside.
  • Ensure the tenderloins are dry by gently patting them with paper towels. Transfer them to the mixing bowl along with the rest of the pineapple mixture, and mix well to evenly coat the tenderloins.
  • Coat the air fryer basket with the leftover olive oil. Arrange the tenderloins in the basket, then add as many sweet potato pieces as will fit in a single layer around the tenderloins. Keep the extra sweet potato pieces aside for a second batch.
  • Air fry the tenderloins for 10 minutes until browned. Flip them over and layer sweet potatoes in air fryer. Continue air frying until pork is slightly pink in the center, about 10 more minutes. Use a thermometer to ensure it reaches at least 145°F (63°C). If needed, cook in 5-minute increments, flipping as necessary.
  • Take out the sweet potatoes from the air fryer once they are soft and golden brown. (Refer to Cook's Note).
  • Once the tenderloins are cooked to perfection, transfer them to a platter and cover them loosely with foil. Let them rest while the remaining sweet potatoes finish cooking, for approximately 10 minutes.
