Air fryer makes quick work of juicy mustard-crusted pork tenderloin, paired with crisp potatoes and green beans for a satisfying meal in no time.
Ingredients:
  • 0.25 cup Dijon mustard
  • 2 tablespoons brown sugar
  • 1 teaspoon dried parsley flakes
  • 0.5 teaspoon dried thyme
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground black pepper
  • 1.25 pounds pork tenderloin
  • 0.75 pound small potatoes (such as The Little Potato® Company), halved
  • 1 (12 ounce) package fresh green beans, trimmed
  • 1 tablespoon olive oil
Instructions:
  • Preheat the air fryer to 400°F (200°C) following the manufacturer's guidelines.
  • In a large bowl, combine mustard, brown sugar, parsley, thyme, salt, and pepper. Roll tenderloin in the mixture until evenly coated on all sides.
  • In a separate bowl, combine potatoes, green beans, and olive oil. Season with salt and pepper, then mix well. Set aside.
  • Cook the tenderloin in the preheated air fryer until slightly pink in the center, about 20 minutes. Use an instant-read thermometer to confirm it reaches at least 145 degrees F (63 degrees C). Transfer to a cutting board and let it rest for 10 minutes before serving.
  • Place the green beans and potatoes in the air fryer basket and cook for 10 minutes, shaking halfway through to ensure even cooking.
  • Slice the tenderloin and present it with a side of potatoes and green beans.
