Air-fried mustard salmon with charred green beans, ready in under 30 minutes.
Ingredients:
  • For the green beans
  • 10 ounces green beans, trimmed
  • 1 teaspoon kosher salt, divided
  • 1/4 teaspoon ground black pepper
  • For the garlic butter
  • 1 tablespoon unsalted butter
  • 1 clove garlic, minced
  • 1 teaspoon unseasoned rice vinegar
  • For the salmon
  • 1 tablespoon mayonnaise
  • 2 teaspoons Dijon mustard
  • 2 teaspoons maple syrup
  • 1 teaspoon lemon zest
  • 1 teaspoon olive oil
  • 2 (6-ounce) salmon filets, skin on or off
  • 1/2 teaspoon kosher salt
  • Cracked black pepper, to taste
  • For serving
  • 2 lemon wedges
  • 1 tablespoon chopped chives
Instructions:
  • Preheat your air fryer to 400°F for the perfect cooking temperature.
  • Coat green beans evenly in a flavorful mix: Combine green beans with olive oil, kosher salt, and ground black pepper in a large bowl.
  • Air fry the green beans: Once the air fryer is pre-heated, spread the green beans in a single layer in the basket. Cook for 8-10 minutes, flipping halfway, until tender and slightly browned. Transfer to a bowl and cover with foil to maintain warmth.
  • Preheat the air fryer to 425°F.
  • Make the garlic butter: As the green beans cook, mix butter, garlic, and rice vinegar in a ramekin and set aside until it's time to melt.
  • Prepare the Dijon sauce for the salmon by combining mayonnaise, mustard, maple syrup, lemon zest, and olive oil in a small bowl, whisking until smooth.
  • Season the salmon filets generously with kosher salt and cracked black pepper on all sides.
  • Coat the salmon filets evenly with the tangy mustard sauce using a pastry brush or spoon.
  • Achieve crispy perfection by air frying the seasoned, mustard-coated salmon filets in the air fryer basket for 10-12 minutes until cooked through to 145°F internally, or until they are golden brown and firm to the touch.
  • In the last 4 minutes of cooking the salmon, place the ramekin with the butter in the air fryer basket. Air fry until the butter is foamy and fragrant. Remove the salmon and butter from the air fryer.
  • Drizzle the hot garlic butter over the green beans and toss until well coated.
  • Presentation: Accompany the buttered green beans with the salmon, top with chopped chives, and add lemon wedges. Serve while hot.
