Bangers and mash cob loaf recipe

Irresistible comfort food: cob loaf filled with creamy mashed potatoes, flavorful pork sausages, and balsamic onions.
Ingredients:
  • 750g red-skinned potatoes, peeled, chopped
  • 84.98 gm milk
  • 50g butter
  • 500g pork sausages
  • 1 x 22cm cob loaf
  • 2 red onions, thinly sliced
  • 16.00 gm brown sugar
  • 2 tsp balsamic vinegar
  • Chopped parsley, to serve
  • Coles Apple sauce, to serve
Instructions:
  • Preheat your oven to 200C/180C fan-forced and prepare a baking tray with baking paper.
  • In a large saucepan, simmer the potato in cold water until tender. Drain and mash until smooth. Season with salt and pepper, then mix in milk and butter. Keep covered to stay warm.
  • Heat half of the oil in a medium saucepan over medium-high heat. Cook sausages, turning occasionally, for 5 minutes until golden. Transfer sausages to a baking tray.
  • Trim the top of the loaf by 3cm and hollow out the inside, leaving a 1cm edge. Place on a prepared tray, spray with oil, and bake with sausages for 10-12 minutes until the bread is crispy and sausages are cooked through.
  • Heat the remaining oil in the same frying pan over medium-high heat. Sauté the onion, stirring occasionally, until light golden brown and soft, around 7-8 minutes. Add sugar, vinegar, and 1 tablespoon of water. Cook, stirring, until the balsamic mixture is thickened and the onions are caramelized, about 3-4 minutes.
  • Fill the cob loaf with most of the mashed potato. Cut the sausages in half diagonally. Place four sausages in the mashed potato. Top with the rest of the mash. Arrange the remaining sausages in the mash. Garnish with onions, sprinkle with parsley, and serve with apple sauce.
