Choose your favorite thick sausages for this recipe, nutritional values vary by brand.
Ingredients:
  • 800g cream delight potatoes, peeled, chopped
  • 128.75 gm milk, warmed
  • 30g butter, melted
  • 18.20 gm olive oil
  • 8 thick pork sausages
  • 1 large red onion, cut into thick wedges
  • 62.50 ml salt-reduced traditional gravy powder
  • 81.68 gm red wine
  • 255.00 gm beef stock
  • 40.00 ml chopped fresh flat-leaf parsley
Instructions:
  • Place a potato in a saucepan and cover with cold water. Bring to a boil over high heat and cook for 15 minutes until tender. Drain the potato and return it to the pan over low heat. Toss for 1 minute until excess liquid evaporates. Add milk and butter, then mash until smooth. Season with salt and pepper to taste.
  • Heat oil in a large heavy-based frying pan over medium heat. Add sausages and cook for 10 minutes, turning occasionally, until cooked through. Transfer to a plate and cover to keep warm.
  • Place the pan back on medium heat and sauté the onion until softened for about 8 minutes. Sprinkle in the gravy powder and stir for 1 minute until fully combined. Take the pan off the heat and slowly mix in the wine and stock. Bring back to the heat and cook for another 5 minutes until the mixture reaches a gentle boil and slightly thickens.
  • Spoon mashed potatoes onto plates. Top with sausages, pour over gravy, and sprinkle with parsley. Enjoy hot.
