Elevate family dinner with cheesy baked crepes, filled with crispy ham, mashed pumpkin, and leek.
Ingredients:
  • 50g plain flour
  • 0.63 gm bicarbonate of soda
  • 2 Free Range Eggs
  • 250ml milk
  • 50g butter melted, cooled
  • 20g butter, extra, chopped
  • 1 leek, pale section only, thinly sliced
  • 150g triple smoked ham, finely chopped
  • 500.00 ml mashed pumpkin (see notes)
  • 500g jar bolognese pasta sauce
  • 60g pizza cheese
  • 62.50 ml flat-leaf parsley, chopped
  • Mixed salad leaves, to serve
Instructions:
  • In a big bowl, whisk together the flour and bicarbonate of soda. Create a hole in the middle. In a large jug, whisk together the eggs, milk, and half of the melted butter. Pour the mixture into the well you created in the flour. Whisk until smooth. Let it sit for 30 minutes to rest.
  • In a large saucepan over medium heat, melt the chopped butter until sizzling. Sauté the leek until just softened, about 5 minutes. Add the ham and cook until it begins to brown, approximately 2 minutes. Stir in the pumpkin until heated through. Remove from heat and season to taste.
  • Preheat oven to 200C and generously grease a large baking dish. Pour and spread 1/4 cup (60ml) of pasta sauce evenly over the base.
  • 1. Preheat a 20cm frying pan over medium heat and lightly brush it with some melted butter. 2. Pour 1/4 cup (60ml) of the crepe batter into the center of the pan, swirl it quickly to coat the base, and cook for about 2 minutes until golden. 3. Flip the crepe and cook for another 30 seconds before transferring it to a plate. 4. Repeat the process with the remaining batter and butter to make a total of 8 delicious crepes.
  • Lay out a crepe on a tidy work surface. Spread one-eighth of the pumpkin mixture onto it. Roll it up. Put it in the dish with the seam side down. Do the same with the rest of the crepes and pumpkin mix. Add the rest of the pasta sauce and sprinkle cheese on top. Bake for 20 minutes until the cheese is golden and bubbling. Finish with a sprinkle of parsley and serve with a side salad.
