Make savory piroshki with a filling of potatoes, leeks, and smoked pork neck in Russian style.
Ingredients:
  • 600g Golden Delight potatoes, peeled, chopped
  • 175 Bertocchi Gold Smoked & Baked Pork Neck, cut into 1 cm peieces.
  • 1 leek, halved, thinly sliced
  • 4 sheets frozen shortcrust pastry, partially thawed
  • 1 egg, lightly whisked
  • 80ml (1/3 cup) light sour cream
  • 5.90 gm wholegrain mustard
  • Salad leaves, to serve
Instructions:
  • 1. Preheat the oven to 200C (180C fan forced) and prepare 2 baking trays with baking paper. 2. Boil the potatoes in a large pot of salted water for 16 minutes until tender. Drain and mash until smooth. Allow to cool.
  • Heat oil in a pan and sauté pork and leek for 3 minutes. Stir in garlic and cook for 1 minute. Season with pepper, then transfer to a bowl to cool for 10 minutes. Mix in mash and season to enjoy.
  • Cut out eight 13cm pastry discs using a pastry cutter. Spoon 1/4 cup of potato mixture onto the center of each disc. Fold the sides up and seal by crimping. Place on baking trays and brush with egg. Bake for 25-28 minutes, swapping trays halfway, until golden and cooked through.
  • Mix the sour cream and mustard in a small bowl, then serve with the piroshky.
