Create a quick and satisfying family meal with only 6 ingredients and a can of soup!
Ingredients:
  • 800g sebago potatoes, peeled
  • 1 leek, trimmed, halved, washed, thinly sliced
  • 2 garlic cloves, thinly sliced
  • 400g bacon or double smoked ham, diced
  • 535g can country chicken soup
  • 100g tasty cheese, grated
Instructions:
  • Preheat your oven to 180°C (160°C fan-forced) and lightly grease a 6-cup baking dish.
  • In a saucepan, bring water to a boil. Cook potatoes for 12 to 15 minutes until just tender, then drain. Transfer to a bowl and let stand for 10 minutes before slicing.
  • Heat oil in a large frying pan over medium-high heat. Sauté leek until softened, about 5 minutes. Add garlic and bacon, cook for 2 minutes. Stir in soup, transfer to a large bowl, add potatoes, season with pepper, and gently stir to coat.
  • Transfer the mixture into the prepared dish and generously sprinkle with cheese. Bake in the oven for around 30 minutes or until the cheese turns a beautiful golden brown. Let it rest for 5 minutes before serving.
