Potato, bacon and leek gratin

Indulge in a luscious, cheesy potato casserole for a delightful side dish.
Ingredients:
  • 1kg chat potatoes, quartered
  • 4 rashers middle bacon, rind removed, trimmed, chopped
  • 1 medium leek, trimmed, halved, washed, thinly sliced
  • 1 garlic clove, crushed
  • 235.00 gm reduced-fat sour cream
  • 250.00 ml grated reduced-fat tasty cheese
Instructions:
  • Preheat oven to 180°C/160°C fan-forced. Boil potatoes in salted water for 10 to 12 minutes until just tender. Drain.
  • Prepare a 7cm-deep, 8 cup-capacity ovenproof dish by greasing it. Mix together potatoes, bacon, leek, garlic, sour cream, and half of the cheese in a bowl. Season with pepper. Transfer the mixture to the prepared dish and sprinkle the remaining cheese on top. Bake for 25 minutes or until the potatoes are tender and the cheese is melted and golden. Serve and enjoy!
