Cozy up with a comforting potato, leek, and ham soup.
Ingredients:
  • 25g butter
  • 2 leeks, washed, trimmed, sliced
  • 600g potatoes, peeled and roughly chopped
  • 1.75l water
  • 500g ham hock
  • 3 flat-leaf parsley stalks
  • salt and cracked black pepper
  • chopped chives, to serve
Instructions:
  • In a large saucepan over medium heat, melt butter until bubbly. Saute leek for 3 minutes until tender, making sure not to brown it.
  • Combine potato, water, ham, and parsley in a pot and bring to a boil. Lower the heat and let it simmer for 1 hour until the ham is tender. Take out the ham and place it on a plate to cool slightly. Remove the pot from the heat and set it aside.
  • Roughly shred the ham. Remove parsley stalks from the soup. Blend the soup until smooth with a hand blender. Add 3/4 of the shredded ham back into the soup and heat for 2 minutes until warmed through. Season with salt and pepper. Serve the soup in bowls, topping with remaining ham and chives. Serve hot.
