30-minute bright soup topped with salty ham, pepper, and chives.
Ingredients:
  • 36.40 gm olive oil
  • 1 brown onion, finely chopped
  • 1 leek, pale section only, thinly sliced
  • 1kg potatoes, peeled, finely chopped
  • 1l chicken stock
  • 360g pea
  • 350g thickly sliced ham, chopped
  • 80ml thickened cream
Instructions:
  • In a saucepan over medium heat, heat half of the oil. Add onion and leek, and cook while stirring for 5 minutes, or until the onion softens.
  • Combine the potato, stock, and 2 cups (500ml) water in a pot and bring to a boil. Then, reduce the heat to low and simmer for 10 minutes or until the potato is tender. Add the peas and cook for an additional 5 minutes or until they are tender.
  • Heat the remaining oil in a frying pan over medium-high heat. Cook the ham, stirring occasionally, for 5 minutes or until it turns golden. Transfer the ham to a plate lined with paper towel to absorb excess oil.
  • Pour half of the vegetable mixture into a heatproof bowl and set aside. Use a stick blender to blend the rest of the vegetables in the pan until smooth. Add back the reserved vegetables, mix well, then ladle the soup into serving bowls. Top with a drizzle of cream, ham, and season to taste.
