Pea and ham soup

Freeze peas for Pea and Ham Soup anytime burst of flavor.
Ingredients:
  • 18.20 gm olive oil
  • 2 medium brown onions, chopped
  • 2 garlic cloves, crushed
  • 450g potato
  • 2 celery stalks, trimmed, chopped
  • 800g piece ham bone, rind removed
  • 1530.00 gm chicken style liquid stock
  • 2 dried bay leaves
  • 1000.00 ml frozen peas
Instructions:
  • In a large saucepan over medium-high heat, heat oil until shimmering. Add onion and garlic, stirring occasionally for 5 minutes until onion softens. Add potato and celery, stirring occasionally for another 5 minutes until vegetables begin to brown.
  • Place the ham bone in a pot along with stock, 1 cup of cold water, bay leaves, and season with pepper. Cover the pot and bring the mixture to a boil. Reduce the heat to low and let it simmer for 30 minutes. Then, add peas and continue simmering for another 15 minutes until the ham starts to fall off the bone. Remove from heat and enjoy!
  • Remove and discard the bay leaves and ham bone. Shred the ham from the bone and discard the bone. Use a stick blender to blend the soup until smooth. Add the shredded ham back to the soup and serve.
