Try our quick and delicious ham and leek mac 'n' cheese for a perfect midweek meal!
Ingredients:
  • 250g macaroni
  • 50g butter
  • 1 leek, thinly sliced
  • 40.00 ml plain flour
  • 560ml (2 1/4 cups) milk
  • 150g English Ham, sliced
  • 20g (1/4 cup) grated parmesan
  • 80g (1 cup) grated vintage cheddar cheese
  • 18.20 gm olive oil
  • 82g (1 1/2 cups) fresh white breadcrumbs
  • 1 clove garlic, crushed
  • 40.00 ml chopped parsley
Instructions:
  • Boil pasta in a large pot of salted water following package instructions until just tender. Drain well.
  • In a large heavy-based pan over medium heat, melt butter until sizzling. Add leek and sauté until tender, about 3-4 minutes. Sprinkle in flour and cook for another minute. Slowly pour in milk, stirring until silky. Let it come to a gentle boil, then lower heat and simmer for one minute.
  • Add succulent ham and season generously with salt and pepper. Mix in the pasta, sprinkle in the parmesan, and add in half of the sharp cheddar. Place a layer of plastic wrap directly on the surface to prevent a film from forming and keep the dish warm.
  • To create crunchy crumbs, warm oil in a non-stick pan. Add breadcrumbs and cook until lightly golden over medium-low heat. Add garlic and stir for 1 minute. Mix in cheese, parsley, salt, and pepper. Cook for an additional minute before removing from heat.
  • Mix the rest of the cheese into the mac 'n' cheese. Serve in bowls and sprinkle with breadcrumbs.
