Upgrade your mac 'n' cheese with savory leg ham, tangy canned tomato, melty mozzarella, and creamy feta.
Ingredients:
  • 18.20 gm olive oil
  • 1 brown onion, finely chopped
  • 2 garlic cloves, crushed
  • 150g leg ham, chopped
  • 44.40 gm tomato paste
  • 2 x Mutti Polpa Finely Chopped Tomatoes 400g
  • 375g broccoli, trimmed, cut into small florets
  • 62.50 ml fresh basil leaves, finely chopped
  • 375g dried macaroni pasta
  • 40g (1/2 cup) reduced-fat cheddar, grated
  • 80g (2/3 cup) reduced-fat mozzarella, coarsely grated
  • 70g feta, crumbled
Instructions:
  • In a saucepan over medium heat, sauté the onion, garlic, and ham in hot oil until the onion softens, about 5 minutes. Stir occasionally.
  • Stir in the paste and cook for 1 minute. Add the tomato and bring to a boil, then simmer on low heat for 10-15 minutes until slightly thickened. Add broccoli for the last 5 minutes of cooking. Finish by stirring in the basil.
  • Cook the pasta according to the package instructions until it is al dente. Drain the pasta and return it to the pan.
  • Combine the broccoli mixture and cheddar with the pasta and toss together.
  • Preheat grill on high. Pour the pasta mixture into a 2L (8 cup) ovenproof dish and top with a generous layer of mozzarella and feta. Grill for 5 minutes, or until the cheese is beautifully melted and bubbly.
