Ham and broccoli pasta bake

Delicious one-pot pasta bake for easy cleanup and maximum flavor.
Ingredients:
  • 300g dried fusilli pasta
  • 380g (1 head) broccoli, trimmed, cut into small florets
  • 20.00 gm reduced-fat dairy spread
  • 4 green onions, thinly sliced
  • 2 garlic cloves, crushed
  • 20.00 ml plain flour
  • 257.50 gm skim milk
  • 1 lemon, rind finely grated
  • 125.00 gm reduced-fat spreadable cream cheese
  • 125.00 ml grated reduced-fat tasty cheese
  • 200g lean shaved ham, chopped
  • 125.00 ml fresh wholemeal breadcrumbs
  • olive oil cooking spray
Instructions:
  • Preheat oven to 180°C. Cook pasta in a large saucepan of boiling, salted water as per packet instructions until al dente. Add broccoli to the saucepan during the last minute of cooking the pasta.
  • In a small saucepan over medium heat, melt dairy spread. Stir in onions and garlic for 1 minute. Add flour and stir constantly for 30 seconds. Remove from heat. Gradually whisk in milk until smooth. Return to heat, stir in lemon rind, and cook until sauce lightly boils for 3 minutes. Reduce to low heat, simmer for 2 minutes, then add cream cheese and tasty cheese. Stir until smooth. Season with salt and pepper. Enjoy!
  • After draining the pasta and broccoli, layer them in an 8-cup ovenproof dish with ham. Pour over the cheese sauce and mix well. Sprinkle breadcrumbs on top, lightly spray with oil, and bake for 20 minutes, until golden and heated through. Serve hot.
