Cozy up with a comforting creamy ham and broccoli pasta casserole in just one hour using frozen broccoli, whole wheat rotini, cooked ham, and Alfredo sauce.
Ingredients:
  • 14 ounces whole wheat rotini pasta
  • 1 (10 ounce) package frozen broccoli
  • 1 tablespoon olive oil
  • 2 cups diced fully cooked ham
  • 1 (15 ounce) jar Alfredo sauce
  • 0.5 cup 2% milk
  • ground black pepper to taste
  • 1 cup shredded Colby-Monterey Jack cheese
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a 9x13-inch baking dish.
  • Bring a generous pot of lightly salted water to a boil. Add pasta and cook until al dente, stirring occasionally, about 10 minutes. Drain.
  • Microwave the broccoli until easily breakable into small pieces.
  • In a large skillet over medium heat, sizzle diced ham in olive oil until golden, about 10 minutes. Add broccoli, cook until excess water evaporates, then add Alfredo sauce and milk. Season with pepper, mix in cooked pasta until coated, and simmer until heated through.
  • Spread the hot pasta mixture in the baking dish, sprinkle with shredded Colby-Monterey jack cheese, and bake in the preheated oven until bubbly and golden brown, approximately 30 minutes.
