Healthy ham and cheese bake revamped with broccoli for a nutritious twist and reduced fat for a lighter indulgence.
Ingredients:
  • 375g dried macaroni pasta
  • 125.00 ml grated reduced-fat cheddar cheese
  • 165.00 ml grated reduced-fat mozzarella cheese
  • 70g feta, crumbled
  • 150g leg ham, chopped
  • 44.40 gm tomato paste
  • 2 x 400g cans diced tomatoes
  • 62.50 ml finely chopped fresh basil leaves
  • 375g broccoli, trimmed, cut into small florets
Instructions:
  • In a saucepan over medium heat, warm the oil. Add in the ham, onion, and garlic. Cook and stir occasionally for about 5 minutes until the onion has softened.
  • Stir in tomato paste and cook for 1 minute. Pour in tomatoes and bring to a boil. Lower heat and simmer for 10-15 minutes until sauce thickens slightly. Add broccoli for the final 5 minutes. Mix in basil and serve.
  • Cook the pasta in a pot of boiling salted water according to the package instructions until tender. Drain and return it to the pot, then mix in the sauce and cheddar cheese, tossing everything together.
  • Preheat the grill to high. Transfer the pasta mixture to an 8-cup ovenproof dish. Sprinkle with mozzarella and feta. Grill for 5 minutes, or until the cheese is melted. Serve and enjoy!
