Savory quiche with ham, broccoli, cheese, and chives. Perfect for any meal.
Ingredients:
  • 1 (9 inch) pie crust
  • 1.5 cups fresh broccoli, chopped
  • 4 large eggs
  • 1.3333333730698 cups whole milk
  • 0.5 teaspoon kosher salt, or to taste
  • freshly ground black pepper to taste
  • 0.5 cup diced cooked ham
  • 0.5 cup grated Gruyere cheese
  • 2 tablespoons chopped fresh chives
Instructions:
  • Preheat the oven to 400°F (200°C) for the perfect baking temperature.
  • Sprinkle a dusting of flour on the bottom of a 9-inch pie or quiche pan and carefully press the crust into the pan, ensuring it reaches all the way to the edge. Gently pierce the bottom and sides of the pastry with a fork, spacing the pricks 1 1/2 inches apart.
  • Line the pan with a perfectly cut parchment paper, lay it gently over the pastry, and weigh it down with pie weights or dried beans.
  • Bake on the center rack of the preheated oven for 10 minutes, then cool completely on a wire rack after removing weights and paper, about 30 minutes.
  • Prepare an ice bath by filling a large bowl with ice and cold water. Boil a large pot of lightly salted water and add broccoli. Cook uncovered until tender, about 5 minutes. Drain the broccoli in a colander and quickly plunge it into the ice water to halt the cooking. Drain the broccoli before moving on to the next step.
  • Lower the oven temperature to 375 degrees F (190 degrees C).
  • In a large bowl, crack the eggs and whisk until yolks and whites are fully incorporated. Mix in the milk, salt, nutmeg, and pepper until well blended.
  • Distribute broccoli, ham, Gruyere cheese, and chives evenly on the crust. Drizzle the egg mixture over the top.
  • Place the quiche on a baking sheet and bake in the center of the oven for 45 to 50 minutes until the egg mixture is set. Test for doneness by inserting a knife in the center - it should come out clean. Let it cool on a wire rack for 10 minutes before serving warm.
