Elevate your dinners with versatile quiche beyond brunch and weekends.
Ingredients:
  • 4 eggs
  • 1 1/4 cups from 1 box (16 oz) Betty Crocker™ Gluten Free All Purpose Rice Flour Blend
  • 1 teaspoon xanthan gum
  • 1/2 teaspoon salt
  • 6 tablespoons cold butter, cut in small pieces
  • 1 egg yolk
  • 1 tablespoon cider vinegar
  • 5 to 6 tablespoons cold water
  • 1 cup half-and-half
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1 cup frozen (thawed) chopped broccoli
  • 1 cup shredded Cheddar cheese (4 oz)
  • 3/4 cup cut-up gluten-free fully cooked ham
  • 1/2 cup finely chopped onion
Instructions:
  • Combine the flour blend, xanthan gum, and salt in a food processor. Process until well mixed. Add the butter and pulse 3 to 5 times until the mixture resembles coarse crumbs.
  • In a 1-cup measuring cup, whisk together 1 egg yolk, cider vinegar, and 3 tablespoons cold water. With the food processor running, pour the egg mixture through the feed tube until the dough starts coming together. If needed, add more water. Form the dough into a flattened disk.
  • Preheat oven to 450°F then roll out dough on lightly floured parchment paper into an 11-inch circle. Transfer the crust to a 9-inch pie plate and trim the edges. Bake for 8 minutes, remove foil, then bake for 4 to 5 minutes more until crust is set. Finally, lower oven temperature to 325°F.
  • In a medium bowl, gently beat eggs, combine with half-and-half, salt, and red pepper. Spread broccoli, cheese, ham, and onion over partially-baked crust. Pour egg mixture evenly over the toppings. Bake for 45 to 50 minutes until the center sets. If needed, cover the crust edges with foil to avoid burning. Allow it to rest for 10 minutes before serving.
