Dairy-free broccoli and mint pesto

Versatile dairy and gluten-free pesto - perfect for pasta, pizza, or fish!
Ingredients:
  • 300g broccoli, trimmed, cut into florets
  • 1/2 small avocado
  • 250.00 ml firmly packed fresh mint leaves
  • 62.50 ml natural almond kernels
  • 2 small garlic cloves, peeled, quartered
  • 170.63 gm extra virgin olive oil
Instructions:
  • Blanch broccoli in boiling water for 1 to 2 minutes until tender. Drain and cool in cold water.
  • Add broccoli, avocado, mint, almonds, and garlic to a food processor. Pulse until finely chopped. Transfer the mixture to a bowl and gently fold in the oil. Season with salt and pepper to taste. Enjoy your flavorful creation!
