Cheesy Crustless Quiche with Broccoli and Ham

Cheesy ham and broccoli quiche - low-carb, gluten-free, and irresistibly creamy!
Ingredients:
  • 3 large egg yolks
  • Vegetable oil spray (for the pan)
  • 1 medium stalk broccoli, stem and crown
  • 5 ounces ham steak, cubed
  • 1 1/2 cups grated cheddar (about 7 ounces)
  • 2 large eggs
  • 1 1/2 cups heavy cream
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
Instructions:
  • Preheat your oven to 375°F, and spray a 9-inch round ceramic baking dish or pie pan with vegetable oil.
  • Start by boiling a large saucepan of salted water. Trim and peel the broccoli stem, then slice it into bite-size pieces. Cut the broccoli crown into small florets. Boil the broccoli until tender, about 4 to 5 minutes. Drain the broccoli well, then spread it in the baking dish.
  • Layer the ham cubes over the broccoli in the baking dish. Set aside half a cup of cheese to sprinkle on top later and evenly scatter the rest over the broccoli.
  • Prepare the custard by combining eggs, egg yolks, cream, salt, and pepper in a bowl. Pour the mixture over the filling in the pan, then sprinkle with reserved cheese.
  • To bake the quiche, place the baking dish on a baking sheet in the oven. Lower the oven temperature to 350°F and bake the quiche for 35 to 40 minutes until the top is golden, the center puffs, and it is slightly wobbly in the center.
  • Allow the quiche to cool: Place the baking dish on a wire rack for a minimum of 30 minutes before slicing into wedges. Enjoy the quiche warm or at room temperature.
