Ingredients:
  • nonstick cooking spray
  • 3 eggs
  • 0.5 cup cottage cheese
  • 0.25 cup milk
  • 1 cup chopped cooked broccoli
  • 0.5 cup shredded Colby-Monterey Jack cheese
  • 0.25 cup chopped red bell pepper
  • 0.5 teaspoon garlic salt
  • 0.125 teaspoon freshly ground black pepper
Instructions:
  • First, preheat your oven to a perfect 350 degrees F (175 degrees C). Then, generously grease a jumbo 6-cup muffin tin using cooking spray.
  • In a blender or Vitamix, quickly blend eggs, cottage cheese, and milk for 1 to 5 seconds until combined. Transfer the mixture to a medium mixing bowl.
  • Combine broccoli, Colby-Jack cheese, bell pepper, garlic salt, and pepper with the cottage cheese mixture, stirring until well mixed.
  • Spoon the mixture into the muffin cups, ensuring an even distribution.
  • Bake until a knife comes out clean when inserted into the center of the quiche, around 30 minutes in the preheated oven.
