Low-carb keto spinach quiche with cheese, mushrooms, and cherry tomatoes - crustless brunch perfection!
Ingredients:
  • cooking spray
  • 1 tablespoon butter
  • 1 onion, sliced
  • 0.5 cup halved cherry tomatoes
  • 1 cup sliced mushrooms
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 3 eggs
  • 0.25 teaspoon ground black pepper
  • 0.25 teaspoon ground nutmeg
  • 1 cup shredded Gouda cheese
Instructions:
  • Preheat the oven to 375°F (190°C) and generously grease a 9-inch pie plate with cooking spray.
  • In a medium cast iron skillet over medium heat, melt butter. Cook and stir onion until softened and translucent, about 5 minutes. Next, add cherry tomatoes and cook until slightly softened, about 3 minutes. Then, add mushrooms and cook until tender, about 3 minutes. Finally, mix in spinach and cook for 1 more minute.
  • Combine cream, eggs, salt, pepper, and nutmeg in a bowl and whisk until smooth.
  • Layer half of the Gouda cheese in the pie plate, then add the spinach mixture on top. Pour over the egg mixture and finish off with the rest of the Gouda cheese.
  • Cook in the oven until eggs are firm and the top is golden brown, approximately 25 minutes.
