Try this flavorful skinny spinach quiche without the crust, packed with mushrooms and fat-free cheese for a satisfying lunch.
Ingredients:
  • cooking spray
  • 3 tablespoons unsalted butter
  • 6.5 ounces mushrooms, chopped
  • 0.5 cup chopped onion
  • 3 tablespoons minced garlic
  • 1 (10 ounce) package fresh spinach, chopped
  • 1 cup egg whites
  • 1 cup skim milk
  • 1 (8 ounce) package shredded fat-free Cheddar cheese
  • 6 ounces crumbled fat-free feta cheese
  • salt and ground black pepper to taste
Instructions:
  • Preheat the oven to a toasty 375°F (190°C) and generously coat a 9x13-inch baking dish with cooking spray.
  • In a skillet over medium heat, melt butter until sizzling. Cook mushrooms, onion, and garlic until onion is tender, about 7 minutes. Stir in spinach and simmer until wilted and liquid has reduced, about 5-7 minutes on low heat.
  • In a bowl, combine egg whites with milk and whisk. Mix in 1/2 cup each of Cheddar and feta cheese. Stir in spinach mixture until well combined. Season with salt and pepper, then pour the mixture into the prepared baking dish.
  • After baking in the preheated oven for 15 minutes, sprinkle the remaining Cheddar cheese over the quiche. Return to the oven and bake until the center is set, approximately 40 minutes.
