Crustless Spinach Quiche

Impress your guests with this tasty egg dish at your next gathering.
Ingredients:
  • 2 cups shredded mozzarella cheese (8 ounces)
  • 1/2 cup whipping (heavy) cream
  • 1/3 cup basil pesto
  • 1 package (10 ounces) frozen chopped spinach, thawed and squeezed to drain
  • 5 eggs
  • 1 cup chunky-style spaghetti sauce
Instructions:
  • Preheat oven to 375°F. Grease a 9x1 1/2-inch quiche dish with cooking spray.
  • Combine 1 1/2 cups of cheese, whipping cream, pesto, spinach, and eggs until smooth; transfer mixture to quiche dish.
  • Bake for 25-30 minutes, or until a knife inserted in the center comes out clean. Sprinkle with the remaining 1/2 cup of cheese and bake for an additional 2-3 minutes until the cheese is melted.
  • While the quiche is baking, gently warm the spaghetti sauce in a small saucepan until hot. Keep it warm. To serve, cut the quiche into wedges and enjoy with the spaghetti sauce.
