Whip up a simple crustless spinach mushroom quiche in a snap - blend, pour, bake!
Ingredients:
  • 2 tablespoons butter
  • 2 cups sliced mushrooms
  • 2 cups reduced-fat sour cream
  • 4 eggs
  • 0.5 cup grated Parmesan cheese
  • 0.25 cup all-purpose flour
  • 1 tablespoon heavy whipping cream
  • 1 teaspoon onion powder
  • 0.25 teaspoon garlic powder
  • 0.25 teaspoon salt
  • 6 drops hot pepper sauce, or more to taste
  • 0.5 (10 ounce) package frozen chopped spinach, thawed and drained
  • 2 cups shredded Cheddar cheese
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) until nice and toasty.
  • Prepare a 10-inch pie dish by greasing it.
  • In a skillet over medium heat, melt butter and sauté sliced mushrooms until tender, around 5 minutes. If needed, drain excess liquid and set mushrooms aside.
  • Blend sour cream, eggs, Parmesan cheese, flour, cream, onion powder, garlic powder, salt, and hot pepper sauce in a blender for 30 seconds to 1 minute until smooth. Transfer the mixture to a large bowl.
  • Combine earthy mushrooms, vibrant spinach, and rich Cheddar cheese into the velvety egg mixture. Gently pour the delightful combination into the awaiting pie dish.
  • Bake in the preheated oven for about 45 minutes, or until the quiche is lightly browned and a toothpick inserted in the middle comes out clean.
