Elevate classic quiche with gourmet chicken and mushroom twist.
Ingredients:
  • 18.20 gm olive oil
  • 400g button mushrooms, sliced
  • 6 shallots, sliced
  • 1 barbeque chicken, skin and bones removed, flesh chopped
  • 40.00 ml torn basil leaves
  • 300ml cream
  • 60ml white wine
  • 44.40 gm tomato paste
  • Salt & freshly ground pepper
  • Mixed salad leaves, to serve
Instructions:
  • Preheat your oven to 180°C and generously grease a 2 litre ovenproof dish.
  • Coat a frying pan with oil and sauté mushrooms and shallots until softened. Take off heat and gently fold in the chicken and basil.
  • Combine eggs, cream, white wine, and tomato paste in a bowl, whisk together until smooth. Season with salt and pepper to taste.
  • Evenly distribute the mushroom and chicken mixture on the greased dish. Pour the egg mixture over it. Bake for 25-30 minutes until golden and set. Serve with salad leaves.
