Easy and flavor-packed crustless quiche loaded with bacon, Swiss cheese, and asparagus for a delicious brunch. No crust needed!
Ingredients:
  • 6 ounces bacon, diced
  • 0.5 pound asparagus, cut into 1-inch pieces
  • 4 ounces baby bella (cremini) mushrooms, sliced
  • 4 ounces shredded Swiss cheese
  • 1.5 cups heavy whipping cream
  • 4 large eggs
Instructions:
  • Preheat the oven to 400 degrees F (200 degrees C) while you prepare a 10-inch pie plate by buttering it. Position the oven rack in the center.
  • In a large skillet over medium heat, crisp up the bacon by cooking and stirring for 5 to 10 minutes. Remove the bacon and leave 2 tablespoons of grease in the skillet. Cook the asparagus and mushrooms in the bacon grease until the asparagus is tender, about 5 minutes.
  • Take the skillet off the heat and mix in the bacon with the asparagus. Spread the asparagus-bacon mixture in the pie pan and top it with Swiss cheese.
  • In a bowl, vigorously blend together cream, eggs, salt, and pepper. Pour the egg mixture evenly over the asparagus-cheese mixture.
  • Bake in the preheated oven for about 30 minutes, or until the quiche is fully set and a knife inserted in the center comes out clean.
