Indulge in a rich and creamy crustless caramelized onion quiche, packed with cheesy goodness. Perfect with a side of fresh green salad.
Ingredients:
  • 1 tablespoon butter
  • 2 teaspoons olive oil
  • 1 small onion, diced
  • 0.75 cup heavy whipping cream
  • 3 eggs
  • 0.75 cup shredded mozzarella cheese
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease an 8-inch square baking dish or pie pan.
  • In a skillet over medium-high heat, heat butter and olive oil. Add the onion and cook until softened, about 10 minutes. Transfer the onion to a plate to cool.
  • In a bowl, gently whisk together cream, eggs, salt, and black pepper until combined. Add mozzarella cheese, Parmesan cheese, and onion, then mix well. Transfer the mixture into the baking dish.
  • Bake in the preheated oven for about 35 minutes until the eggs are fully set and a clean knife inserted in the center comes out clean. The edges should be lightly golden while the top remains light in color.
