Indulge in a delectable dairy-free macaroni and cheese remake, perfect for all!
Ingredients:
  • 250g dried macaroni pasta
  • 250g broccoli, trimmed, cut into small florets
  • 20g Nuttelex spread
  • 40.00 ml plain flour
  • 520.00 gm reduced-fat soy milk
  • 100g soy cheese, grated
  • 100g sliced leg ham, diced
  • 4 green onions, trimmed, thinly sliced
  • Salad leaves, to serve
  • Fresh flat-leaf parsley, to serve
Instructions:
  • Preheat the oven to 180°C/160°C fan-forced. Grease a 6 cup-capacity baking dish. Boil pasta in a large saucepan following packet instructions. Add broccoli for the last 2 minutes. Drain and transfer to a large bowl.
  • In a saucepan over medium heat, melt spread. Add flour and stir for 2 minutes until bubbling. Gradually whisk in milk and bring to a boil. Cook for 5 minutes until thickened. Remove from heat and stir in cheese. Season with pepper to taste.
  • Combine the sauce, ham, and onion with the pasta, stirring well. Transfer mixture to a baking dish and bake for 15-20 minutes until golden and bubbling. Serve with a side of salad leaves and a sprinkle of parsley on top.
