Ham, leek and rocket frittata

Delicious leftover Christmas ham recipe.
Ingredients:
  • 1 leek, white part only, thickly sliced
  • 8 eggs, lightly whisked
  • 125ml cream
  • 40g parmesan
  • 100g fontina cheese or gruyere cheese, cut into small cubes
  • 150g leg ham, chopped (see note)
  • 50g rocket leaves, finely shredded
  • Mixed leaf salad, to serve
Instructions:
  • Begin by preheating the oven to 180°C. In a medium frying pan over gentle heat, heat half of the oil. Add leek and cook, stirring occasionally, for 5 minutes or until the leek is tender.
  • In a medium bowl, mix together eggs, cream, Parmesan, Fontina, ham, arugula, and leek. In a 20cm heavy-based ovenproof frying pan over low heat, heat the remaining oil. Pour in the egg mixture and cook for 3-4 minutes until the eggs begin to set on the bottom.
  • Place the frying pan in the oven and bake the frittata for 20 minutes, or until it is barely set. Slice into wedges and enjoy with crusty bread and mixed leaf salad.
