Elevate mashed potatoes with pumpkin and health benefits in a quick pressure cooker recipe.
Ingredients:
  • 2.5 pounds russet potatoes, scrubbed
  • 0.25 cup margarine (such as Country Crock®)
  • 1 cup canned pumpkin
  • 0.5 teaspoon pumpkin pie spice
Instructions:
  • Cut the potatoes into large chunks, keeping the skins on for extra flavor and texture.
  • Place the potatoes and 1 1/2 cups of water in a stovetop pressure cooker.
  • Secure the cooker lid and position the pressure regulator as per the manufacturer's guidelines. Bring to a steady flow of steam with a whistling sound, approximately 10 minutes. Adjust heat until the pressure regulator gently rocks. Cook for 10 minutes. Allow pressure to release naturally for 5 to 10 minutes following manufacturer's instructions. Unlock and remove the lid.
  • After draining the water, mash the potatoes and stir in margarine. Then incorporate pumpkin, salt, pumpkin pie spice, and basil until well blended.
