Roast garlic, pumpkin and potato mash

Whip up a tasty side dish by making mashed potatoes!
Ingredients:
  • 1 garlic bulb, unpeeled, cloves separated
  • Olive oil cooking spray
  • 400g desiree potatoes, peeled, chopped
  • 500g butternut pumpkin, peeled, chopped
  • 41.20 gm milk
  • 40g butter, chopped
  • 40.00 ml chopped fresh flat-leaf parsley leaves
Instructions:
  • 1. Preheat your oven to 180°C (160°C fan-forced) and line a baking tray with baking paper. 2. Arrange the garlic on the tray and lightly spray with oil. 3. Roast for 12-15 minutes until tender. 4. Allow it to cool for 10 minutes before squeezing the garlic from the skins and discarding them.
  • Cook the potato and pumpkin in a pot of boiling, salted water until tender, about 10 minutes. Drain, return to the pot, mash with garlic until almost smooth. Mix in milk, butter, salt, and pepper. Serve sprinkled with parsley.
