Ingredients:
  • 24 (about 6kg) desiree potatoes, peeled, halved
  • 36.40 gm olive oil
  • 40.00 ml coarsely chopped fresh rosemary
  • Salt & freshly ground black pepper
Instructions:
  • Preheat the oven to 200°C. Slice each potato thinly at 5mm intervals, almost to the bottom, ensuring even cuts. Transfer to a bowl. Drizzle with oil, and add garlic, rosemary, salt, and pepper. Mix well to coat the potatoes evenly.
  • Transfer the mixture to a roasting pan. Roast in the oven, rotating occasionally, for 1 hour or until beautifully golden and crispy. Serve in a delightful serving bowl.
