Haloumi hasselback broccoli recipe

Broccoli hasselback stuffed with haloumi and roasted with dukkah - a crowd-pleasing vegetarian side dish.
Ingredients:
  • 1 head (about 400g) broccoli
  • 100g haloumi, cut into 1cm thick slices
  • 18.20 gm olive oil, plus extra to serve
  • 2 tsp dukkah
Instructions:
  • Preheat the oven to 200C/180C fan forced. Line a baking tray with baking paper. Trim the broccoli base to ensure it sits flat, then wash it under cold running water. Place the broccoli in a heatproof bowl, cover it, and microwave on High for 2 1/2 minutes until tender. Let it cool for 5 minutes before moving on.
  • Make 3 slits in the broccoli, ensuring not to cut all the way through, then insert a piece of haloumi into each slit. Drizzle with oil, season, and bake for 20 minutes until golden. Sprinkle with dukkah and bake for an additional 5 minutes. Serve with a drizzle of extra oil.
