Giant skillet haloumi & zucchini fritter recipe

Whip up a large, quick fritter perfect for family meals.
Ingredients:
  • 500g zucchini
  • 100g haloumi
  • 1 bunch chives
  • 75g (1⁄2 cup) self-raising flour
  • 2 eggs
  • 36.40 gm olive oil
  • 150g pkt Australian hot smoked salmon
  • 85g (1/3 cup) crème fraîche
  • 60g baby rocket
  • 1 lemon, cut into wedges
Instructions:
  • Grate zucchini and squeeze out excess liquid. Combine with grated haloumi in a large bowl. Chop chives, reserving a little before adding the rest to the bowl.
  • Combine flour in the bowl then season. Create a well in the center. Whisk in eggs using a fork until fully combined. Heat oil in a non-stick pan and spread fritter mixture evenly. Cook for 3 minutes until set. Invert fritter onto a plate, then slide back into the pan to cook the other side for 2 minutes.
  • As the fritter cooks, peel the skin off the salmon and break it into large flakes.
  • Transfer the fritter onto a serving plate and garnish with salmon, crème fraîche, rocket, and reserved chives. Serve with lemon wedges.
