Whip up a delicious gluten-free meal with pan-fried chicken, mashed potatoes, and sautéed greens in just four ingredients.
Ingredients:
  • 4 small (about 150g each) single chicken breast fillets, excess fat trimmed
  • 13.80 gm extra virgin olive oil
  • 1 bunch (about 500g) silverbeet, white stems removed, coarsely chopped
  • 50g (1/4 cup) raisins, coarsely chopped
  • 2 x 300g ctns Pumpkin Mash
Instructions:
  • Cut each chicken breast in half horizontally. Heat oil in a large frying pan over medium heat. Season the chicken with salt and pepper. Cook half the chicken for 3 minutes per side until cooked through. Transfer to a plate, cover with foil, and repeat with the remaining chicken.
  • Heat the rest of the oil in the pan on medium-high heat. Toss in the silverbeet and raisins, cook for 3-4 minutes until the silverbeet wilts. Season with salt and pepper to taste.
  • Heat the mashed potatoes according to the instructions on the packet.
  • Plate the mashed potatoes evenly among serving plates, then top with the sautéed silverbeet mixture and chicken before serving.
