Pumpkin stuffed with flavorful layers of beef, corn, and creamy mashed potatoes - a delightful surprise awaits when opened!
Ingredients:
  • 1 small pumpkin
  • 6 potatoes - peeled and cubed
  • salt and pepper to taste
  • garlic powder to taste
  • 2 pounds lean ground beef
  • 1 (15 ounce) can cream-style corn
  • 1 (15.25 ounce) can whole kernel corn
Instructions:
  • Using a knife, carefully cut a 4-inch circle from the top of the pumpkin, ensuring to include the stem. Reserve this as a lid for later use. Scoop out the seeds and stringy insides of the pumpkin. Place the cleaned pumpkin in a 9x13 inch baking dish. Preheat the oven to 350 degrees F (175 degrees C).
  • Boil a generously salted large pot of water. Add potatoes and cook until tender, approximately 15 minutes. Drain the potatoes, then mash them. Season with salt, pepper, and garlic powder to taste, and set aside.
  • Brown the ground beef in a skillet over medium heat until no pink shows, then drain. Fill the pumpkin with the cooked ground beef. Add creamed corn and whole kernel corn. Spread mashed potatoes on top and cover with the pumpkin lid. Pour 2 cups of water into the baking dish.
  • Roast in a preheated oven until the pumpkin is tender and easily pierced with a fork, about 50 to 60 minutes.
