Indulge in crispy maple-mandarin-mustard roast pork alongside crusty bread or creamy mashed potatoes.
Ingredients:
  • 1.5kg boneless pork leg
  • 19.20 gm sea salt flakes
  • 84.38 gm maple syrup
  • 4 strips mandarin rind
  • 82.50 ml mandarin juice
  • 23.40 gm wholegrain mustard
  • 8 garlic cloves, unpeeled
  • 2 cinnamon sticks
  • 10cm piece fresh ginger, sliced
  • 255.00 gm chicken stock
  • 2 bunches broccolini, trimmed, halved lengthways
  • 3 mandarins, peeled, halved crossways
  • Crusty bread or mashed potato, to serve
Instructions:
  • Preheat oven to 240°C (220°C fan).
  • Dry the pork with a paper towel, season generously with salt, then transfer to a roasting pan. Roast for 30 minutes until the rind begins to crackle.
  • In a large jug, mix together maple syrup, mandarin rind and juice, mustard, garlic, cinnamon, ginger, and stock.
  • Lower the oven temperature to 200C/180C fan-forced. Pour the maple mixture into the dish. Roast for 1 hour, or until the pork is nearly cooked through. Add the broccolini and mandarin to the pan, and roast for an additional 15 minutes, until the pork is fully cooked and the broccolini is tender. Serve the pork with crusty bread or mashed potato.
