Maple and Ginger Baked Beans

Slow-cooked homemade baked beans with Yellow Eye beans and grade A amber maple syrup for rich flavor and minimal effort.
Ingredients:
  • 1.5 pounds dry great Northern beans
  • 1 large onion, cut into wedges
  • 4 ounces salt pork, diced
  • 0.75 cup real maple syrup
  • 0.25 cup molasses
  • 1 teaspoon mustard powder
  • 0.25 teaspoon ground black pepper
  • 2 cups boiling water
Instructions:
  • Place the dried beans in a large pot with water and let them soak overnight. Drain the water, refill the pot with fresh water, and bring it to a boil. Simmer until the beans are tender, approximately 1 hour.
  • Combine maple syrup, molasses, brown sugar, ginger, mustard powder, salt, pepper, and water in a bowl. Set aside.
  • Layer onion wedges in the base of a 3 quart or larger slow cooker. Arrange salt pork cubes on top of the onions. Drain beans and add to the slow cooker. Pour maple syrup mixture over beans. If needed, top up with extra hot water to ensure beans are covered.
  • Cook the beans on Low for 10 to 12 hours or on High for 5 to 6 hours. Check occasionally if cooking on High to ensure they have enough water. To reduce juiciness, uncover for the last 30 minutes to steam off excess liquid.
