Prepare and freeze these delicious treats in advance for easy enjoyment during the holiday season.
Ingredients:
  • 125ml (1/2 cup) thickened cream
  • Melted butter, to grease
  • 200g fresh dates, pitted
  • 185ml (3/4 cup) boiling water
  • 125g butter
  • 155g (3/4 cup, firmly packed) dark brown sugar
  • 2 eggs
  • 225g (1 1/2 cups) self-raising flour, sifted
  • 50g (1/3 cup) plain flour, sifted
  • 2.50 gm ground ginger
  • 1/4 tsp ground cloves
  • 150g Soft & Juicy Figs, coarsely chopped
  • 375ml (1 1/2 cups) bought vanilla custard
  • 54.00 gm maple syrup
  • Pure maple syrup, extra, to serve
Instructions:
  • Preheat your oven to 180ºC. Brush six 350ml-capacity ramekins or pudding moulds with melted butter, then place them in a baking dish. In a heatproof bowl, mix dates, water, and bicarbonate of soda, allowing them to sit for 10 minutes to soften. Lightly mash with a fork and stir in 2 tablespoons of brandy.
  • In a large bowl, cream together butter and sugar with an electric beater until pale and creamy. Add eggs one at a time, beating well after each addition. In another bowl, sift together flour, mixed spice, ginger, and cloves. Gently fold the flour and date mixture into the egg mixture in alternating batches until smooth. Finally, fold in the figs.
  • Transfer the mixture evenly into the ramekins and ensure the tops are leveled. Pour boiling water into the baking dish until it reaches halfway up the ramekins. Bake in the oven for 40-45 minutes or until a skewer inserted in the center comes out clean. Take the ramekins out of the dish and let them cool down.
  • Combine the custard, cream, maple syrup, and remaining brandy in a saucepan. Gently stir over low heat for 3-4 minutes until heated through.
  • Plate the puddings and generously drizzle with maple custard and extra maple syrup before serving.
