Prepare and freeze ahead for easy weekday meals.
Ingredients:
  • 27.00 gm maple syrup
  • 21.00 gm fresh lime juice
  • 20.00 ml salt-reduced tamari
  • 1 tsp finely grated fresh ginger
  • 250g firm tofu, cut into 1cm-thick slices
  • 1 small red onion, cut into thin wedges
  • 150g sugar snap peas, trimmed
  • 1 bunch broccolini, cut into 3cm lengths
  • 150g pkt shelf-fresh ramen noodles
  • 1 tsp sesame oil
  • 3.00 gm toasted sesame seeds
  • Fresh sliced red chilli, to serve
  • Thai basil leaves, to serve
Instructions:
  • Mix together the maple syrup, lime juice, tamari, and ginger in a large resealable glass or plastic container. Add tofu and make sure it's well coated.
  • Combine the onion, peas, broccolini, and ramen in a separate airtight container.
  • Place the containers in the freezer for up to 3 months or until the night before cooking. Thaw overnight in the fridge.
  • In a large non-stick frying pan over high heat, sizzle tofu in half of the oil, saving the marinade. Sear for 2 minutes on each side until golden brown.
  • Heat the rest of the oil in a large wok over high heat. Add in all the veggies from the container and stir-fry for 3-4 minutes until just tender. Pour in the marinade and stir-fry for an additional minute.
  • Plate the vegetable mixture and tofu evenly on serving plates. Sprinkle with sesame seeds, chili, and fresh basil.
