Maple and thyme chicken roast, ready in just 40 minutes for a delightful dinner.
Ingredients:
  • 1/3 cup real maple syrup
  • 2 tablespoons balsamic vinegar
  • 1 tablespoon fresh thyme leaves or 1 teaspoon dried thyme leaves
  • 1/2 teaspoon salt
  • 1 clove garlic, finely chopped
  • 4 bone-in skin-on chicken breast halves with large pieces of skin intact (about 3 lb)
  • 4 tablespoons firm butter, each tablespoon cut into smaller pieces
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon freshly ground pepper
Instructions:
  • Preheat oven to 425°F with the oven rack in the middle position and line a 13x9-inch pan with foil.
  • Combine the syrup, vinegar, thyme, 1/2 teaspoon of salt, and garlic in a small bowl.
  • Gently separate the skin from the chicken by working your fingers along one side. Be careful not to peel off the skin. Arrange the chicken pieces skin-side up in a pan lined with foil. Drizzle approximately 2 tablespoons of the syrup mixture under the skin of each chicken piece using a spoon and spread it evenly over the meat. Place 1 tablespoon of butter pieces on each piece. If you have moved the skin, gently put it back in place. Coat the skin with oil, then season with 1/2 teaspoon of salt and pepper.
  • Roast uncovered for 30 to 35 minutes until chicken juices run clear when thickest part is cut to the bone (180°F). Rest for 5 minutes before serving to let juices redistribute.
