Crunchy chicken and waffles with chilli thyme maple

Elevate waffles with crispy chicken and a delicious maple drizzle.
Ingredients:
  • 168.75 gm maple flavoured syrup
  • 1/2 long red chilli, finely chopped
  • 2 tsp fresh thyme leaves
  • 375.00 ml plain flour
  • 20.00 gm cornflour
  • 7.50 gm mild paprika
  • 30.00 ml all-purpose seasoning
  • 260.00 gm buttermilk
  • 4 chicken schnitzels (uncrumbed)
  • 56.88 gm extra virgin olive oil
  • 1 corn cob, silk and husk removed
  • 1/4 red cabbage, shredded
  • 66.25 gm ranch dressing
  • 4 waffles
Instructions:
  • In a small saucepan over medium heat, combine syrup, chilli, and thyme. Heat for 3 to 4 minutes without boiling. Set aside for later use.
  • Mix together flour, cornflour, paprika, and seasoning in a shallow dish. Pour buttermilk into a separate bowl.
  • Coat chicken in flour, then in buttermilk, and back into flour mixture, pressing gently. Place on a tray and repeat with the rest of the chicken.
  • In a large frying pan over medium-high heat, heat oil. Cook chicken in two batches, flipping halfway through, for about 5 minutes until golden and fully cooked.
  • Microwave corn with water on a plate covered with plastic wrap until tender, about 4 minutes. Let it cool slightly, then remove kernels from cob. Mix cabbage, corn, and ranch dressing in a large bowl. Season with salt and pepper, then toss to combine.
  • Toast the waffles until they are warm and crispy. Serve the chicken alongside the waffles, cabbage salad, and a generous drizzle of maple syrup mixture.
