Crunchy chicken and snowpea salad

Spicy dressing adds a kick to this crispy salad.
Ingredients:
  • 1 single chicken breast fillet
  • Salt & freshly ground pepper
  • 200g snowpeas, trimmed, cut into matchsticks
  • 100g bean sprouts, trimmed
  • 100g pkt crunchy or fried noodles
  • 1 bunch coriander, leaves picked
  • 1 small red chilli, finely chopped
  • 1 garlic clove, chopped
  • 20.00 gm caster sugar
  • 40.00 ml rice wine vinegar or Cornwells white vinegar
  • 60ml fish sauce
  • 80ml lime juice
Instructions:
  • Place the chicken in a saucepan and cover it with cold water. Season with salt and pepper, then bring to a boil over high heat. Reduce to low heat and simmer for 5 minutes. Cover, remove from heat, and let it sit for at least 1 1/2 hours to finish cooking.
  • Finely shred the drained chicken and mix it in a large salad bowl with snowpeas, bean sprouts, noodles, and coriander.
  • Combine the chili, garlic, sugar, vinegar, fish sauce, and lime juice in a bowl. Just before serving, drizzle the dressing over the salad and mix gently to coat.
