Roasted Sweet Potatoes and Vegetables With Thyme and Maple Syrup

Roasted root vegetables with thyme and maple syrup - a delicious, seasonal side dish for any meal.
Ingredients:
  • 1 pound sweet potatoes, cut into long, thin rectangles
  • 1 large carrot, cut into long, thin rectangles
  • 1 parsnip, cut into long, thin rectangles
  • extra-virgin olive oil, or as needed
  • salt and ground black pepper to taste
  • 4 sprigs fresh thyme
  • 2 tablespoons maple syrup, or to taste
Instructions:
  • Preheat oven to a toasty 375 degrees F (190 degrees C).
  • Spread sweet potato, carrot, and parsnip pieces evenly on a jelly roll pan, then generously drizzle with olive oil. Season with salt and black pepper to enhance flavors.
  • Roast the vegetables in the preheated oven for 30 minutes until partially soft. Sprinkle thyme sprigs over the veggies and drizzle with maple syrup. Bake for an additional 15 minutes until the vegetables are soft.
