Indulge in succulent roasted pork and veggies glazed in sweet and tangy maple mustard dressing.
Ingredients:
  • 2kg regular easy carve pork leg roast, scored at 1 cm intervals
  • 80ml olive oil
  • 9.60 gm sea salt
  • 60ml maple syrup
  • 23.40 gm Dijon mustard
  • 1 garlic clove, crushed
  • 750g sweet potato, peeled, cut into wedges
  • 2 fennel, trimmed, quartered
  • 2 pears, quartered
Instructions:
  • Preheat the oven to 230C. Pat the pork dry with paper towel, then place it in a roasting tray. Drizzle with 1 tablespoon of oil and sprinkle with salt, making sure to massage the salt into the scored rind. Roast the pork for 40 minutes until the rind begins to crackle, then reduce the heat to 180°C.
  • In a jug, combine the remaining oil, maple syrup, mustard, and garlic. Season with salt and pepper. Place sweet potato, fennel, and pears around the pork and generously drizzle with the maple syrup mixture. Roast for an additional 55-60 minutes or until the pork juices run clear when pierced with a skewer. Cover the pork with foil and let it rest for 15 minutes. Transfer the vegetables and pears to a plate, cover to keep warm.
  • Slice the succulent pork and serve alongside the perfectly roasted vegetables, drizzled with the flavorful pan juices.
